A half beef gets you one side of the animal: roughly equal portions of front-quarter and hind-quarter cuts. Steaks from the ribeye, strip, sirloin, and tenderloin region; roasts from the chuck and round; short ribs, brisket side, and ground beef from what doesn't go to cut. Cut sheet is all yours.
